Basic Guacamole
Combining the aromatics with salt before pounding them results in a finished guac that's noticeably more flavorful.

Servings: 4 people
- 1/2 small yellow onion roughly chopped
- 1 serrano chili roughly chopped
- 30 g fresh coriander 50g works too
- 1 tsp kosher salt
- 2 large ripe avocados
- 1/2 juice from lime
Place onion, chili, coriander, salt, and lime juice in a food processor or blender and process until smooth paste is formed, scraping down sides as necessary.
Split each avocado in half, discard one pit, and spoon out flesh into a medium bowl. Roughly mash with a stiff whisk.
Add onion/chili puree. Fold to combine. Season to taste with more salt and lime juice.
If keeping for later add the remaining pit and cover with cling to stop discoloration
