I don't like fruit cake. I don't like fruit cake because its dry and just a bit boring. This is not that fruit cake! This fruit cake is how cake should be! Moist, delicious and perfect with a cup of coffee (or tea). Keeps real well also.

Ingredients
115gmargarine (or unsalted butter)
340gdried fruit
225gsugar
227gtin crushed pineapple
1teaspoonmixed spice
1teaspoonbicarbonate of soda
225gself raising flour
2eggs
a pinch of salt.
Instructions
Mix margarine (or butter), dried fruit, sugar, crushed pineapple, mixed spice, bicarbonate of soda in a pan and boil for 3 minutes. Frothy
Remove from heat and cool slightly
Add flour, eggs and a pinch of salt. Mix
Pour into a 7" round cake tin and bake for 1½ - 2 hours at gas mark 3/200f/150c/135c fan

Enjoy with coffee (espresso, unsweetened) for best results
