Pineapple Fruit Cake

I don't like fruit cake. I don't like fruit cake because its dry and just a bit boring. This is not that fruit cake! This fruit cake is how cake should be! Moist, delicious and perfect with a cup of coffee (or tea). Keeps real well also.

Equipment

  • 7" cake tin
  • Scales
  • Pan
  • Stiry thing

Ingredients

  • 115 g margarine (or unsalted butter)
  • 340 g dried fruit
  • 225 g sugar
  • 227 g tin crushed pineapple
  • 1 teaspoon mixed spice
  • 1 teaspoon bicarbonate of soda
  • 225 g self raising flour
  • 2 eggs
  • a pinch of salt.

Instructions

  • Mix margarine (or butter), dried fruit, sugar, crushed pineapple, mixed spice, bicarbonate of soda in a pan and boil for 3 minutes. Frothy
  • Remove from heat and cool slightly
  • Add flour, eggs and a pinch of salt. Mix
  • Pour into a 7" round cake tin and bake for 1½ - 2 hours at gas mark 3/200f/150c/135c fan

Notes

Enjoy with coffee (espresso, unsweetened) for best results
