
I don't like fruit cake. I don't like fruit cake because its dry and just a bit boring. This is not that fruit cake! This fruit cake is how cake should be! Moist, delicious and perfect with a cup of coffee (or tea). Keeps real well also.

Ingredients
- 115 g margarine (or unsalted butter)
- 340 g dried fruit
- 225 g sugar
- 227 g tin crushed pineapple
- 1 teaspoon mixed spice
- 1 teaspoon bicarbonate of soda
- 225 g self raising flour
- 2 eggs
- a pinch of salt.
Instructions
- Mix margarine (or butter), dried fruit, sugar, crushed pineapple, mixed spice, bicarbonate of soda in a pan and boil for 3 minutes. Frothy
- Remove from heat and cool slightly
- Add flour, eggs and a pinch of salt. Mix
- Pour into a 7" round cake tin and bake for 1½ – 2 hours at gas mark 3/200f/150c/135c fan

Enjoy with coffee (espresso, unsweetened) for best results
